The week before Christmas is arguably the week of the year that we want to feel calm, relaxed and in control of everything on our to-do lists, but more often than not, it is the complete opposite!
It’s always that week that I find myself desperately trying to juggle social gatherings with last minute present wrapping and drop offs, only to inevitably find myself exhausted on Christmas eve in a tangle of cellotape and ribbon!

A Nourishing Meal? What’s That!
Enter The Slow Cooker!
And you can forget about me even trying to factor in the idea of eating good, nourishing meals (which is what my body needs ahead of the festive feast that is still to come). Instead I tend to find myself fueled by mince pies and chocolate fingers, which is not necessarily a bad thing but probably not what my doctor would recommend! Any of this sounding familiar?? Please don’t tell me I’m the only one!
And while I may have perfected this ritual over the past decade, I have noticed that as I creep further into my thirties life continues to become more hectic and my body less forgiving! What I actually need to power me through that week before Christmas is hearty and warming meals that require minimal effort and can ideally be bubbling away during the day while I’m at work.

A saving grace at those times where I find myself wishing there were 36 hours in a day!
I love being able to throw something into the Slow Cooker first thing in the morning and then leave for work knowing that dinner is taken care of. Even if the rest of the day dissolves into chaos, I can rest assured that I will have a delicious meal to return home to –and sometimes nothing is more comforting than that.

Below I’ve included 3 of my favorite Slow Cooker meals for cold winter days. Each one is warming, hearty and incredibly simple to throw together. And while you might want to make up a batch of rice or mashed potatoes to accompany them, know that it is definitely not necessary. Any of these would be just perfect served in a bowl on their own, and let’s be honest…sometimes that’s all we can bring ourselves to do.
