Is it really even Christmas if you don’t have box of After Eights on the sideboard?  That perfect after dinner treat to clear the palette after all the rich Christmas food.

What about turning that minty freshness into a yummy ice cream pud?!  Our no churn ice cream recipe is so simple – the work of mere minutes.  Then just steal a bit of freezer space and you’ve got a homemade dessert on tap whenever you want it.  It goes just as well with a Christmas movie, by the way. 

And this is the perfect recipe for January too – when all the guests have gone, the house is quiet again and you’re wondering what to do with that box of After Eights that’s still on the sideboard!  Make up a batch and enjoy over the month as you complete that Christmas puzzle, enjoy your new books, or watch the miniseries you saved over Christmas.

Ingredients
  

  • 360 ml double cream
  • 150 ml sweetened condensed milk
  • 1.5 tsp peppermint extract
  • 300 g box of After Eights cut into 1cm squares

Instructions
 

  • In a large bowl, whip the double cream until soft peaks form.
  • Gently fold in the sweetened condensed milk and the peppermint extract, ensuring not to push out all the air that was incorporated when the cream was whipped.
  • Carefully add in the After Eight pieces, making sure they are evenly distributed.
  • Pour the mixture into a 9.5”x5” loaf tin and place in the freezer for 12 hours or overnight.
  • Remove from the freezer, scoop, and enjoy!
