A prepare ahead Christmas breakfast, does that even exist?!

Well, let us tell you, it most definitely does and it is in the form of this Christmas Breakfast Potato Bake!

Easy, to make, easy to clean up and guaranteed to be a winner with the whole family plus you can make it on Christmas Eve so that all you have to do on Christmas morning is put it in the oven and you’ve got breakfast covered!

Sausage, peppers & onions

While you can absolutely substitute ingredients in the recipe to ensure it reflects your family’s preferences, we personally prefer using sausage to bacon as it ensures the bake is moist and generally adds more flavor.

That being said, feel free to use any type of sausage meat here…classic pork sausages would work brilliantly but so would pork & apple, pork & leek…the possibilities are endless!

Now let’s talk making ahead!

 

If you do decide that you want to prep this the night before so that your sleep can be free of breakfast worry then follow the recipe as is, to the point that the dish is fully assembled. At that point, cover with tin foil and place in the refrigerator overnight.

The following morning, just preheat your oven and place the covered dish straight in from the refrigerator. Follow the same cooking steps as below!

Christmas Breakfast Potato Bake

Ingredients
  

  • ½ medium green pepper diced
  • ½ medium red pepper diced
  • 1 medium brown onion diced
  • 450 g sausage meat remove casing if need be
  • 150 g mature cheddar grated
  • 450 g frozen hash browns
  • 8 medium eggs
  • 350 ml double cream
  • 1 tsp chives finely chopped
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat the oven to 180C and grease a 9”x13” baking dish; set aside.
  • On medium to high heat, cook the sausage meat in a large pan, breaking it up as you go. Once fully cooked, remove from the pan and set aside on a large plate lined with kitchen towel to allow some of the fat to drain.
  • In the same pan, cook the onion and peppers until beginning to soften, 5-7mins; set aside.
  • In a large bowl, whisk together the eggs until yolks and white are fully combined; add the double cream, vegetables, half of the cheese and salt and pepper.
  • Add the cooked sausage meat and hash browns to the baking dish and combine. Pour the egg mixture over the sausage and hash browns and top with the remaining cheese.
  • Cover with tin foil and bake in the oven for 25mins. Remove the foil and continue to bake uncovered for another 25mins or until the center is set.
  • Top with chives and serve.
