Honey Roasted Carrots
- 450 g carrots
- 1½ tbsp olive oil
- 1 tbsp honey
- ½ tsp salt
- ¼ tsp ground black pepper
- 5-6 sprigs thyme
- Preheat the oven to 200C.
- Peel the carrots and cut into medium width sticks/batons; place on a baking tray.
- Add the olive oil, honey, dried thyme and seasoning to the carrots and toss to ensure evenly coated.
- Add the sprigs of fresh thyme so they are nestled in around the carrots.
- Place in the oven for 30-40 minutes until the carrots are tender and deliciously golden and caramelised.
