This is our kind of sandwich! Creamy, rich Nutella between crumbly peanut butter biscuits and decorated simply with icing sugar!

There is nothing that we don’t love about this Christmas bake! You likely already have the ingredients on hand, they taste absolutely delicious, it’s easy to make and gives you all of the festive feels.

It is the perfect Christmas baking project for those cold, dark, December days!

Rolling out Peanut Butter Sandwich Biscuits

While the flavours themselves might not necessarily be synonymous with Christmas, they are a tried and tested indulgent combination and therefore we think they deserve a place in the Jolly Festive Christmas Biscuit Box!

Plus, they give you the perfect excuse to break out your Christmas cookie cutters and what better way to get little hands involved in the process than stamping out the Christmas shapes! While any shape would work here, we’re rather partial to stars which give us all the festive feels.

Two important things here!

One, do not overbake the biscuits –you want them to snap but not be so hard that when you bite into one you lose the Nutella out of the sides…while we’re not above licking Nutella off our hands, it’s probably best to avoid that with a gift box biscuit!

Two, do not skip the chilling time. There are lots of science-y reasons why this step needs to take place but essentially it’s this step that allows the biscuits to hold their shape as they bake and ensures they sandwich together neatly at the end!

Peanut Butter Sandwich Biscuits with Nutella

Nutella Peanut Butter Stars

Ingredients
  

  • 120 g creamy peanut butter
  • 120 g unsalted butter, softened
  • 100 g light brown sugar
  • 100 g caster sugar
  • 250 g plain flour
  • 1 tsp baking powder
  • 1 medium egg
  • 1 tsp vanilla extract
  • 200 g Nutella
  • 1 tbsp icing sugar

Instructions
 

  • Line a baking tray with greaseproof paper and set aside.
  • In small bowl, combine the flour and baking powder; set aside.
  • In a large bowl, cream together the butter and peanut butter until smooth. Add the sugars and mix until light, fluffy and fully combined (approx. 2mins).
  • Add the egg to the butter and sugar mixture; mix until incorporated. Add the vanilla extract and mix.
  • Gradually add the dry ingredients, mixing between each addition until a dough forms. Once the dough begins to form, use your hands, instead of electric mixer, to finish forming the dough and prevent overmixing.
  • Divide the dough in half, placing one half between 2 large sheets of greaseproof paper; set the other aside.
  • Using the greaseproof paper to prevent sticking, roll the dough out to approximately ¼” thickness. Gently remove the top layer of greaseproof paper and begin cutting out your biscuits. Use a spatula to transfer the biscuits to the greaseproof paper lined baking tray. Remember to cut a small star in the middle of half of the cookies.
  • Roll out any leftover scraps and repeats with the second half of the dough.
  • Once the cut out shapes are placed on the baking tray, place the baking tray into the refrigerator for at least an hour to allow the biscuits to firm up so they will hold their shape in the oven. Preheat the oven to 180C during this time.
  • Once the biscuits have cooled, place into the oven for 10-12 minutes or until golden brown. Allow them to cool on the baking tray for 5 minutes before transferring to a wire rack to finish cooling.
  • To assemble, spread 1tbsp of Nutella over the biscuits with no cutouts. Gently dust the biscuits with cutouts with icing sugar. Sandwich the halves together and enjoy!
