The Slow Cooker Makes Light Work of Chicken Pot Pie
Is there anything more comforting than chicken pot pie?! It’s creamy, warming, hearty –it’s the ultimate winter food.
But let’s be honest, it can sometimes feel like a little bit too much effort, especially on a ridiculously busy December weeknight in the run-up to Christmas.
This slow cooker version however, is perfect for that exact scenario and means that you can enjoy a dinner that feels like it’s wrapping you in a hug, even when at your most frantic and frazzled.

From Salsa to Pot Pie
A few years ago, I was searching online for recipe inspiration when I discovered the concept of slow cooker salsa chicken. All you had to do was throw some chicken breasts into the slow cooker and pour over a jar of your favorite salsa.
Hours later, you would shred the meat and have the most delicious pulled chicken to add to tacos, salad, you name it! I told Hannah all about it and she added it to her weekly dinner rotation even faster than I did!
But the recipe got me thinking, what about if I were to switch out the salsa for other sauces…and so slow cooker barbecue chicken was born! And trust me, it’s just as delicious as its salsa sister!
But then I thought, while barbecue and salsa chicken are delicious any time of the year, they definitely have their moment in those warmer summer months.
What could I try that would be warming and comforting enough to carry me through winter…and then it came to me…cream of mushroom soup!

Do Not Fear the Mushrooms!
Now, hear me out!
First of all for any mushroom haters out there, this DOES NOT taste of mushrooms!! I promise you I’m telling the truth because my boyfriend is not a mushroom fan at all (I’m almost banned from using them at home!!) but he has licked his plate clean on every recipe test for this one!
Second of all, the soup does all of the work for you! It creates the thick, creamy sauce which makes chicken pot pie so delicious and means that you don’t have to spend any time in the kitchen creating it!
It really is a miracle worker!
So while this chicken “pot pie” may not have any puff pastry topping, I promise that it won’t disappoint!
Serve over some mashed potatoes and you will have found your new December weeknight go-to meal!
