It’s delicious enough that my teenage boys wolf it down without a grumble, even recommending it to visiting friends (I was shocked at first, too!). Plus, you’ll feel great knowing you’re treating your body like a temple, packed to the brim with superfood goodness! Avocado, broccoli, spinach, Brussels sprouts—you name it!

Roasting Broccoli And Brussel Sprouts Sweetens Their Flavours & Gives A Crispy Texture
You Ain’t Tried Nothing ‘Til You’ve Tried Brussels Roasted…
If you hesitated as you read Brussels sprouts, do not dismay. My Christmas Green Salad calls for roasted Brussels sprouts, not boiled. There is no comparison. Roasted Brussels sprouts are sweet, crispy, and full of gorgeous nutty flavor. Jo first introduced me to the concept of roasting them when she moved to the US – our American pals are waaaay ahead of us on the sprout train! And it’s not just sprouts. Broccoli takes on a delicious new, sweeter flavor when given the roasting treatment too.
What Does Christmas Green Salad Go With?
Not going to lie – I serve this salad all year round. It goes just as well with a summer barbecue as it does a winter lunch. It’s my staple go-to and reliably goes down a storm.
It doesn’t really need any accompaniment as it’s a meal by itself or a perfect healthy addition to the Christmas buffet table. Serve it alongside a red tomato salad, and you’ve got a festive red-and-green salad combo that is bound to catch the eye.
But our Christmas Green Salad would also make a great side dish to go with:

Festively Coordinated Red and Green Christmas Salads Make A Statement On The Table
Tips for Making This Salad
Use Darker Green Leaves: Hearty, dark green leaves are perfect for this salad. We love baby spinach, butterhead lettuce, and rocket.
Frozen Edamame Work Too: If you can’t find fresh edamame beans, use frozen. Cook and immediately chill to room temperature by running under cold water.
Try Other Cheeses: We love the sharp, salty flavor of feta in this salad. But goat cheese or crumbled blue cheese would work well too.
Serve Salad Warm or Cold: Broccoli and Brussels sprouts can be added to the salad directly from the oven or left to cool, as you prefer.
Dress Directly: Use as good quality olive oil and balsamic vinegar as you can find. You can prepare the dressing separately and then add it to the salad, but I prefer drizzling the oil and vinegar directly on top.

Christmas Green Salad, Full Of Delicious, Healthy Goodness
Christmas Green Salad Recipe

Christmas Green Salad
Ingredients
- 100 g green leaves e.g. baby spinach, butterhead lettuce, rocket
- 1 medium head of broccoli cut into small florets
- 150 g Brussel sprouts peeled and halved
- 150 g edamame beans
- 150 g cucumber
- 6 spring onions medium-sized
- 1 avocado ripe
- 75 g feta
- olive oil good quality extra virgin
- balsamic vinegar
- salt & pepper
Instructions
- Preheat oven to 190C.
- Place the broccoli florets and halved Brussels sprouts on a baking tray. Drizzle with olive oil and toss. Turn the Brussels sprouts to ensure all are lying cut side up (for maximum crispiness). Sprinkle with salt and freshly ground pepper and place in preheated oven for approximately 15 minutes, until the edges of the veg have caught and are slightly blackened.
- [Optional] Cook and cool edamame if using frozen.
- While waiting for the vegetables to roast, prepare the other salad items. Finely slice the spring onions. Dice the cucumber and feta into cubes, similarly-sized to the beans.
- Once the broccoli and Brussels sprouts are ready, remove from the oven. Leave to cool if desired. Place the green salad leaves in a large wide bowl. Sprinkle the prepared spring onions, cucumber, edamame beans, broccoli, Brussels sprouts, and feta.
- Peel and slice the avocado and place it on top of the salad.
- Drizzle directly with olive oil and balsamic vinegar to taste, and finish with a sprinkle of salt and freshly ground pepper.
- Serve immediately.
