And while we are never going to suggest that eating them straight from the tin isn’t appropriate, these Christmas chocolate biscuit cups elevate your favourites to a new level and allow you to use them up if you’re one of those people that sees too much chocolate as a problem!!

Christmas Chocolate Biscuit Cups
Ingredients
- 250 g plain flour
- ½ tsp salt
- 1 tsp bicarbonate of soda
- 200 g unsalted butter softened
- 100 g caster sugar
- 120 g light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 24-30 Christmas chocolates (Heroes, Celebrations, Roses, Quality Street etc.) unwrapped
Instructions
- Preheat the oven to 180C and grease a mini cupcake pan; set aside.
- Place the unwrapped Christmas chocolates into the freezer until you’re ready to use them; this helps make sure they don’t melt straight away!
- In a medium bowl, mix together the flour, salt and bicarbonate of soda; set aside.
- In a large bowl, mix the butter and the sugars together until light, fluffy and smooth; 2-3 minutes with an electric or stand mixer.
- Add the egg and mix again until fully incorporated. Add the vanilla extract and mix until combined.
- Gradually add the flour mixture until just incorporated.
- Roll the dough into balls (tbsp. of dough per ball) and place into the mini cupcake pan.
- Place into the oven for 10-11 minutes until the edges are just golden brown but the center is still soft.
- Remove from the oven and immediately push a frozen Christmas chocolate into the centre of each biscuit cup.
- Place them into the refrigerator to cool before removing from the cupcake tray.
- Once removed, dust with icing sugar and enjoy!
